Whole sun-dried red chili is a spice ingredient for processing, with mildly spicy and low-heat sensory descriptions. Assess the material through the actual recipe and preparation step before agreeing the sample and supply specification.
Plan the spice preparation
State the complete composition required and the cleaning, cutting or grinding performed in your process. Confirm the actual sun-dried preparation, its relevant execution parameters and any treatment required before food use.
With-stem and without-stem are unselected preparation references. Choose the condition needed by your process and define the accepted stem or crown remnants for the proposed pod lot.
Use distinct technical criteria
Keep 8–12 cm (3.15–4.72 in), 3,000–5,000 SHU and 8%–20% moisture as independent references. Each requires a defined criterion, material fraction, measurement or test method and relevant sample or lot.
- Describe the intended spice-processing step and use rate.
- Agree how the pod dimension and axis are assessed.
- Retain the full heat range in the analytical requirement.
- Set the moisture test basis for the actual material.
- Evaluate the mildly spicy, low-heat character in the recipe.
A sensory assessment does not select a point within the SHU range. Keep the accepted sample and its results identifiable when confirming the material for the order.
Define packaging and storage together
Select the actual vacuum-pack material and closure before agreeing handling. The 24-month reference requires a dry, cool place with defined temperature and humidity for the selected package.
Confirm handling after opening and obtain the composition, process and lot basis supporting the period. Include those conditions in the purchasing brief alongside the stem preparation and sample acceptance.
