Plan the whole dried red chili ingredient around the cooking or hotpot formula that will receive it. Agree the full composition and actual pod preparation before accepting technical criteria, process and cooler package conditions.
Describe the cooking ingredient
Request complete composition for ingredients and additives in the proposed chili. Set pod presentation and acceptable stem and seed condition for the preparation being purchased.
Build the cooking and hotpot brief
- Actual whole chili and full formula.
- Receiving recipe and pod preparation.
- Stem and seed requirements.
- Sensory criteria and applicable technical methods.
- Selected-lot evidence for the actual material.
- Processing, records and cooler package scope.
Evaluate sensory and processing requirements
Assess the spicy description through actual sensory acceptance for the supplied material. Agree any heat or physical criterion using appropriate methods and selected-lot evidence relevant to that preparation. Identify which material and sampling basis the records cover, and connect their acceptance criteria with the preparation the cooking operation actually intends to receive.
Confirm AD drying, Raw processing and the further preparation required before the intended use. The ingredient must not be eaten directly; agree the receiving operation's recipe-process requirements before recommendation.
Connect records with receiving
For requested HACCP, QS or Halal conditions, check holder, issuer or standard, scope, validity and actual product/process relevance. Establish which ingredient and preparation those records cover before accepting the procurement requirement.
Use 24months with an agreed cooler-storage temperature and suitable package and receiving applicability. Complete packing once the formula, pod, sensory, technical and actual cooking-preparation brief is accepted for the material to be supplied.
